100% artisan signature cheese made with pasteurized goat's milk from the Sierra de Gredos.

Miss Capra is Quesería Valdecabras' most awarded cheese: an acid-lactic coagulation cheese, slow drained and naturally aged. Its blue-green rind with vegetable ash is edible and adds character, while the interior evolves from a firm paste to a creamy, melt-in-your-mouth texture.

Flavor and texture

Fruity flavor, mild acidity with citrus notes, hints of sweet cream and a finish reminiscent of raw hazelnut. The rind enhances the flavor with fungal, spicy and slightly bitter notes.

Recommended pairing

Cava brut nature, champagne, aged amontillado, ciabatta bread, crackers, forest honey, wild preserves or fig jam.

Storage

Store in the refrigerator between 2 and 6 ºC in its original packaging. Consume preferably within 12 weeks of production.
